My Scrambled Eggs

This is the only way I will eat eggs... seriously.

Serves two

in a mixing bowl whisk together:
5 or 6 eggs
3 good splashes of chalula (any hot sauce)
spoon full of chunky salsa none of the juice just the veggies
large spoonful of sour cream
a dash of johnny's seasoning salt (or normal table salt)
a dash of pepper

scramble and serve. We sometimes have this for dinner when money is really tight and we always have these things in the fridge then we wrap it up in a tortilla and have as a meal.

buttermilk panacakes

Grandma'a famous buttermilk panacakes... (yes I intentionally spelled it that way, that is how we used to ask for them as children!)

I dont actually measure so bare with me :) (you can do it I know you can)

In a mixing bowl
biscuick about a cup to a cup and a half per # of people eating
1 egg
a glug of vegetable oil
buttermilk until the consistency is smooth and runny but not too liquidy... just try, it will make sense :)

then heat on a frying pan or better yet on an electric skillet with butter on it then cook through on either side and serve with your choice of toppings!!! MMMM I want some now...

Rice/Veggie/Chicken dinner

umm nice name huh? Well again threw together some Trader Joe's goodies and discovered this one, again no left over around and Paisley our 2 year old ate it up like candy!

Rice
brown long grain rice cooked (any rice will do this is our preference)

Veggie
half a package of Trader Joe's vegetable medley cooked(carrots,peas,cauliflower,corn)(your preference of veggies will do just fine)

Protein
cut up into bit sizes some frozen chicken breasts
marinade them as at least 15 min in Trader Joes Island Soyaki (or whatever you so choose)
brown them a drizzle of olive oil


You can buy the rice cooked or precooked, cook the veggies according to the bag and then brown the chicken bites all all together and EAT WHILE HOT!!! you may want to add a dash of soy sauce... but we ate it as it, the chicken had marinated long enough it had enough flavor :)

Chicken Chipotle Sausage w/Pasta

OK I made this one up so bare with me... and the directions, it is SO easy though, I made it two nights ago and my husband is wanting more.

Sauce
1 package of pesto powder (from the grocery store you just follow the directions adding water and a bit of olive oil)

Pasta
1 package spinach pasta (we get it from Trader Joe's, choose your own)

Meat
chicken chipotle sausage browned in a drizzle of olive oil (I used 4 of the sausages and it was personally the perfect amount of spice and meat per noodles)(we find the sausages at Trader Joe's too, again wherever you so choose!)

I boil the pasta while the sausage is browning and then make the pesto sauce and add all together and serve... we unfortunately had no left overs :(

Marbled Peanut Butter Chocolate Fudge

* 4 cups sugar
* 1 can (12oz) evaporated milk
* 1 cup butter or margarine
* 1 jar (7oz) marshmallow cream
* 3 pkgs (6oz) semisweet chocolate chips, 18 ounces total, or about 3 cups
* 1 tablespoon vanilla
* 1 cup peanut butter

Preparation:
Combine sugar, milk and butter in a heavy saucepan; bring to a boil and cook for 8 minutes, stirring constantly. Add marshmallow cream, chocolate chips and vanilla; stir to blend. Pour half of mixture into a buttered 13- x 9- x 2-inch pan; dollop with spoonfuls of peanut butter. Spoon remaining chocolate mixture over the peanut butter. Gently swirl the mixture with a knife to create a marble effect. Chill until firm; cut into 1-inch pieces and store in an airtight container in the refrigerator.
Makes about 5 pounds.

MONSTER COOKIES

MONSTER COOKIES

1 c. butter
3 eggs
1 c. brown sugar
1 c. white sugar
1/4 tsp. vanilla
1/4 tsp. Karo syrup
2 tsp. soda
1 1/2 c. peanut butter
1 c. chocolate chips
4 1/2 c. oatmeal
M & M candies

Mix all ingredients except M & M's. Spoon by teaspoonful onto ungreased cookie sheet. Put 3 M & M candies on each cookie to give monster face. Bake 12 minutes at 350 degrees. Don't over bake. (I personally add a MORE than 3 candies... but your choice)
